Months before the beginning of the new school year, Julie and I were imagining our new creations. Very quickly, we had the idea to design a gourmet and comforting rooibos.

One of my favorite Fall/Winter cakes is Cinnamon Rolls. Cinnamon rolls are very popular in Scandinavia and North America. My favorite: a cinnamon roll just out of the oven where the glaze starts to melt...

The Cinnamon Roll or Kanelbullar was invented in Sweden in the early 1900s. Today, the Swedes enjoy these little rolls for breakfast but especially during Fika, "coffee" in reverse in Swedish. In other words, tea time the Swedish way! Sweden even has a national day for this pastry, the Kanelbullens dag, celebrated every year on October 4th.

For our recipe of Rooibos Bio Cinnamon Roll, we fell under the charm of these little gingerbread men made of sugar that bring the sweetness needed for a gourmet rooibos.

The other ingredients in our recipe are rooibos, apple, cinnamon, ginger, blackberry leaves, rosehip leaves, cinnamon stick, star anise and roasted buckwheat.
